An Ji Bai Pian (White Petals)– An Ji Bai Pian is grown high in the Tian Mu Mountains of An Ji County in Zhejiang Province. “Crouching Tiger, Hidden Dragon” was filmed in this spectacular region. The growing conditions are clean and pristine – chemical fertilizers, pesticides are not required – and the soil is sandy, rocky, and rich in minerals. It is not a White Tea; the name refers to the “silvery-green” appearance of the unprocessed leaf. This is an ancient tea with references dating back 900 years to the Song and Tang Dynasties. Due to the growing conditions and climate, Bai Pian has a much higher L-theanine content than other green teas. The hand-picked bud and tender new leaf release a delicate, fresh, clean, and sweet taste when infused. It has been described as “liquid silk”.

Description

China is famous for its “Ten Thousand Teas”, a poetic number to suggest the abundance of teas produced in China, the majority of which are green. China green teas are traditionally pan-fried, which prevents the leaves from oxidizing (usually called fermenting), which occurs during the production of black teas. Chinese green teas are known for their subtle and complex flavours and refreshing aromas. They are rich in Vitamin C and generally smoother than black or other green teas. Unlike black teas they can be infused 3-4 times by adding 1 minute to each steeping.
